Sodium Acid Pyrophosphate, or SAPP, is used in the food industry. More specially, it is used for certain types of baking powder and baking creams in addition to working as a leavening agent for prepared cake and doughnut mixes. SAPP maintains the natural white color of cooked potatoes.
